GF Fruit and Nut Granola
I know it’s been a little while since I’ve had a chance to post anything but that’s only because 2017 has been BUSY!!!! So many changes and many many lemons haha. And you know what they say… when life gives you lemons you sure as hell better make lemonade!

With all this ‘lemonade’ that I have been making, I have realized that I have a tendency to forget to eat! Have some homemade granola to place into my yogurt has been such a life saver for me (especially at 11pm when I realize that it’s 11 freaking pm already and I have completely forgotten to eat and it’s too late to make a meal…sigh).
This granola cannot be easier! It’s gluten free and dairy free and uses up what you most likely already have in your pantry and if you don’t have some of the ingredients this recipe is super forgiving!
Let’s jump right in!
I noticed that making this recipe step by step makes it come out crunchy and prevents the dried fruits from burning (yes, sigh I speak from experience).
Toast a cup of your choice of nuts. I personally love walnuts and almonds in my granola as those 2 are very heart healthy and contain many very healthy fats as well as vitamin E, protein, fibre and magnesium. Very good stuff to start (or in my case end) your day with!
While you’re getting the nuts as crunchy as you’d like, measure out a cup of Gluten Free Whole Grain Rolled Oats, add 1/4 cup of Organic Extra Virgin Coconut Oil, 3 tbls Pure Dark Maple Syrup (dark amber maple syrup has a much deeper flavour), 1/2 tsp cinnamon, 1/4 tsp freshly grated nutmeg and a dash of salt to bring out all the flavours.
Mix these ingredients well and spread them out on a baking sheet at 350° for about 15 mins or until golden.
Meanwhile, chop up your dried fruit of choice. I love prunes and golden raisins in my granola so I chopped up a 1/4 cup of prunes and 1/4 cup of raisins.
Once the oat mixture turns golden, toss with the nuts and dried fruits and place back into the oven for 4-5 mins.
Turn off the oven and let the mixture dry out further for about 10 mins but keep an eye to make sure that the dried fruit don’t burn.
I like to add 2 ingredients to my granola which I did not mention above as I know they may be hard to find. Those 2 ingredients are popped quinoa and dark chocolate covered popped quinoa. I am in LOVE with these 2 ingredients. On their own they are nothing special but in granola Oh My Word are the ever decadent! I know that you can usually find popped quinoa in organic shops and you can definitely find it at Trader Joe’s and Wegmans if you live in the states. As for the dark chocolate covered popped quinoa that you can find here Dark Chocolate Covered Puffed Quinoa a little goes a long way with these little guys and they add that perfect decadent touch to this granola.
