Chocolate Chia Seed and Berry Parfait
You have got to try this easy, vegan and completely guilt free chocolate chia seed berry parfait heaven! It tastes like a chocolate and berry dessert but it’s good for you!
I know it’s hard to believe and it took me some time as well to get on the chia soaking bandwagon but ever since I hopped on, I have simply refused to get off! For anyone that knows me, you are fully aware that breakfast is simply a hot bowl (yes, bowl…) of coffee and that’s it. I am not a breakfast person. It is simply too much work to think of something to eat and then to actually bother with chewing… LOL. Yes, I am a lazy morning gal!
But with this recipe all that has gone out the window! I soak my chia seeds in either coconut milk or almond milk overnight and blitz up some frozen berries. Then, in the morning, I simply top all of this goodness off with some granola and voila!
All you need are some chia seeds, a liquid of choice, raw cacao powder, a splash of vanilla and a sweetener of choice. I prefer some honey in this recipe 🙂
Depending on how thick you would like the chia ‘pudding’ add minimum 3 tbs of chia seeds to 1 cup of liquid. I personally add about a 3/4 cup of chia seeds to 4 cups of liquid as I like my chia ‘pudding’ to be on the thicker side. I also like to make a mason jar full at once because I feel the chia pudding only gets yummier with time.
So don’t be afraid to add a bit less and then check back in a couple of hours. If it’s not thick enough add more chia seeds. 🙂 And don’t forget to stir well. I just shake the mason jar to really mix everything well.
After you have added the chia seeds, add your sweetener of choice, vanilla and cacao powder. Stir or shake well and refrigerate minimum a couple of hours.
The best part about this chia parfait is that it’s super versatile. You can top it with just about anything your heart desires and you’ll love it! I love the combination of field berries with chocolate as the sweet and sour mixture is super fresh. Top the berries off with some homemade granola and you’re golden!

- 3 tbs chia seeds
- 1 cup liquid of choice (coconut milk, almond milk, dairy milk,...)
- 1 tbs honey
- 2 tbs raw cacao powder
- 1 tsp vanilla extract
- Mix all the ingredients together
- Refrigerate preferably overnight but minimum a few hours
- Top with blitzed up frozen berries, fresh berries, granola... whatever your heart desires 😉
