Nespresso Copycat Roasted Corn Dark Chocolate
TGIF!!!! This incredible Nespresso Copycat Roasted Corn Dark Chocolate squares recipe is the perfect way to start the weekend!
Especially if you’re on the East Coast where the rain just doesn’t seem to want to stop!
It’s been raining for what feels like months and I simply cannot wait for the sun to come out.
So I thought that this recipe would be the perfect pick-me-up!
Last time I went to Nespresso to pick up some capsules with my mom (she LOVES her Nespresso machine) they gave me a dark chocolate square that had roasted corn in it!
I instantly fell in love and new I just had to recreate the recipe.
After some research and trial and error, I got the result I was looking for 🙂
It’s not exactly what I had tried at Nespresso but I like it even better!
I’m not a fan of anything too sweet so I used high quality dark chocolate.
I melted the dark chocolate over a double boiler and added the zest of 1 lemon.
Additionally, if the dark chocolate is too bitter to your taste, you can either take a lower percentage chocolate or add some honey and vanilla extract.
After the lemon zest, I added the roasted corn.
I simply took whole kernels (the ones that are especially for roasting not the popcorn ones) and soaked them overnight.
The next morning I drained them and roasted them for 2 1/2 hours at 170°F.
I placed them in a food processor and pulsed until I reached my desired consistency.
This little treat is the perfect pick-me-up! Especially on sad days like today. All one needs is a nice warm cup of coffee and a sweet that is also super heart healthy! Dark chocolate has many good properties so you don’t have to feel guilty when you indulge with a thin square 😉

- 500g Cup High Quality Dark Chocolate
- Zest of 1 Lemon
- 1/2 Cup Roasted Corn Kernel Bits
- Fleur de Sel
- Melt chocolate in double boiler
- Add lemon zest
- Add corn kernels
- Mix well and spread over silicone baking sheet
- Tap the sheet a few times so the chocolate spreads evenly
- Sprinkle Fleur de Sel
- Place in fridge for 30 mins to set
- Remove from fridge and cut into desired shapes
