Mint Chocolate Chip NICE cream
ALLLLL ABOARD!!!!! The gluten free, dairy free 4 ingredient Mint Chocolate Chip NICE cream train is leaving now!!!
I was SO sceptical at first! I mean how on earth could ice cream be made from a banana base? ESPECIALLY since I was MAJORLY craving mint chocolate chip! I mean there was no way this recipe could possibly satisfy my craving for good ol’ fashioned mint chocolate chip ice cream goodness!
But low and behold not only did it satisfy my craving, it came out so heavenly creamy that the original could NEVER compare!
It took literally 5 minutes to make (not counting that the bananas were placed in the freezer the night before).
I placed the frozen bananas, coconut milk and peppermint extract into my food processor and let the magic unfold before my very eyes.
I added the chocolate chips and a pinch of pink Himalayan salt and let it all blend up for about 20 seconds.
At this point I tasted my creation and….
HOLY MOLY that’s good!!!! As a HUGE fan of mint, I added a bit more mint extract.
Since my bananas were just ripe enough to eat (I don’t really like the taste of brown bananas for anything other than baking) they weren’t sweet enough. So I added a small dash of brown sugar.
However, if you use bananas that are on the riper side you definitely don’t need to add any more sugar so I left it out of the ingredients.
I am a HUGE lover of vanilla and will literally add it to any and all sweets I make/ bake/cook LOL
And this was no exception! However, I am not sure it really added anything special. So you can test that out should you desire 😀
Lastly, one ingredient that is by no means mandatory but really added to this “nice” cream are cacao nibs. These are totally optional!
If you don’t have them you should still go ahead and make this ice cream treat 🙂
But if you happen to have them on hand definitely sprinkle some on top. They make the ice cream look great but they also add the most perfect crunch! 🙂
As I write this and nibble on my new fave summer treat I realize I can never go back to traditional ice cream!!!!
Call me a nonbeliever no more! This gal has definitely boarded the NICE cream train! 😀

- 3-4 frozen bananas
- 1/4 cup coconut milk
- 1/8 tsp pure peppermint extract
- Dark chocolate chips
- Pinch of pink Himalayan salt
- a couple of drops of liquid chlorophyll to make the colour green
- tiny splash of vanilla extract
- cacao nibs
- Place frozen bananas, coconut milk and peppermint extract in food processor.
- Process until smooth.
- Taste and adjust for sweetness and mintiness.
- Add chocolate chips and process until combined.
